Today I tried something new, to me anyway... Kale, I've never had it before, but I read about how nutritious it is. It has powerful antioxidant properties, it's considered anti-inflammatory and is high in beta carotene, vitamins K & C and other nutrients like calcium.
I just made a simple salad with it, I threw in some broccoli florets and sundried tomatoes and a little extra virgin olive oil and balsamic vinegar and that was it. I don't know what I was expecting and I don't know why I've never had it before but it was pretty good. I think it'll make a great addition to my mixed salad greens.
Next time I'll try cooking with it... I read that in Ireland they mix it into their mashed potatoes... hmmm, I wonder if that'll work with Mashed Sweet Potatoes.... I'll keep you posted.
