I just finished eating... I made some chicken breasts, very simple and delicious. I preheated the oven to 350° I threw the chicken breasts into a shallow baking dish and coated them with a mixture of equal amounts of mustard and honey and some spices... and baked that for 40 minutes. Voila!! I used Guldens Spicy Brown mustard, it doesn't have any calories and you don't need too much spicing up either, I just added very little sea salt, some freshly ground pepper, and rosemary. But you can use any mustard, like Dijon, and you can add whatever spices you like. To me, spices are very personal, everybody has their own favorites and favorite mixtures also.
You can also coat the chicken breasts with a mixture of half balsamic vinegar & half honey, that works very well also.
I also had a big bowl of salad... I threw some spinach on the bottom, added some fancy organic mixed greens and sliced up a tomato, I sprinkled some extra virgin olive oil and balsamic vinegar over that... plus I also had some steamed veggies with my chicken. Plenty of carbs with the salad & veggies, good amount of protein from the chicken, and a little fat from the oil and whatever fat was left in the chicken.
